The Route of Tuna from Trap Nets in Conil, a Bid for Gastronomic Tourism
Fuerte Conil is offering visitors four varieties of this product which is so typical along the Andalusian coast.
Fuerte Conil-Costa de la Luz Hotel is ready to take part in the long-established “Ruta del Atún de Almadraba (Route of Tuna from Trap Nets) from May 25th to June 10th. This gastronomic route will welcome everyone interested and different bars, restaurants, as well as hotels will be involved in the event.
On the dates indicated, the village of Conil de la Frontera will host this event to promote local gastronomy as a tourist asset. It is the fourth time that this contest is held. The past editions were really successful.
Once again Plaza de Santa Catalina will witness the Muestra del Atún de Almadraba (Trap Net Tuna Exhibition), the perfect place to try the different varieties of this product which is so typical along the Andalusian coast.
As in past years, each establishment will offer a specific menu of tuna from trap nets so that everybody is able enjoy this excellent fish, along with other products from the area, all of them elaborated with the experience and expertise demonstrated year after year by local chefs.
Dishes based on tuna from trap nets
Beach Club Fuerte Conil will participate in the route with four dishes having tuna from trap nets as the main ingredient:
- Tuna collar with aubergine pastry and potato confit (dish presented to the innovative contest).
- Tomato cream with tuna belly to the roast garlic (dish presented to local contest)
- Roasted tuna loin with red onion and young potatoes
- Tuna mini-burgers with glazed onions on rocket salad and tartar sauce
Almadraba bluefin tuna is a fish species well-known for its high nutritional value. Its proteins contain both essential amino acids for the organism and a high content of vitamins and minerals. Its fatty acids reduce the probability of suffering strokes.
Almadraba technique: an artisanal fishing gear
Almadraba or trap net is a tuna fishing gear, the simplest existing. This gear consists of placing two boats at a certain distance setting between them a superficial net fixed with a longline where tuna fish and other fish are trapped. As they are alive when are lifted up to the boat, selection and discarding of the small fish can be made. The most experienced fishermen get down between the boats and on the net and they select those tuna weighting about 200 kg.
Between April and August the migration through the Strait of Gibraltar of tuna population migration takes place. After wintering in the Arctic and off the Norwegian coast, they start a long journey towards the Mediterranean Sea.
During this journey the largest specimens, measuring up to three metres long and weighting over 700 kg, take the lead and the youngest and smallest individuals go after them. For capturing them these migratory movements are used, both outward (right season) and return journey (return season) and the almadraba (trap nets) are set up, one of the most ancient fishing gear in history.
The almadraba is set up three kilometres off the coastline and it is 34 metres deep, presenting a complex structure consisting of a large frame of cables where nets are attached, and they are staked to the bottom with anchors and chains, and supported at the surface by floats.
